Alkaline Vegan Blueberry Pancakes - Alkaline Breakfast

Blueberries are considered a superfood, and a super source of antioxidants, with the ability to boost immunity and help undo damage of a high fat diet, they are a great asset for overall wellness. 

Agave syrup is very low on the glycemic index, making it an ideal sweetener for people with diabetes or who need to control their blood glucose levels. However, it still contains 60 calories per tablespoon, so it should be used sparingly. Fortunately, agave syrup is very sweet, so just a little will go a long way.

Sesame Oil has long been used in traditional medicine for it's anti-inflammatory, antioxidant, anti-bacterial, and pain-reducing properties. Like other oils on our alkaline food list, it can be good for your heart and to control blood sugar. Unsaturated fats are good for your heart, and Sesame Oil is 82% unsaturated fatty acids.

Spelt is an ancient grain. It is high in manganese, phosphorus, Vitamin B3, magnesium, and zinc while being very low in fat. Whole grain spelt has a low glycemic index meaning it won't spike your blood sugar. Like many of the whole grains on our complete alkaline nutrition guide, it can help reduce your risk of stroke and cardiovascular disease.

*Blueberries are high in Vitamin C, Manganese, and Vitamin K1.

Servings          2 

INGREDIENTS

1 cup of Spelt Flour

1 pinch of Sea Salt

1 cup of Coconut Milk or Hemp Milk

2 table spoons of Agave

1/3 cup of Blueberries

1 table spoon of Sesame Oil

Agave as syrup


DIRECTIONS

Add 1 cup of Spelt Flour in a large bowl, then add a pinch of Sea Salt, along with 1 cup of Coconut Milk or Hemp Milk.

Gently stir all the ingredients. Once the ingredients are combined and are in a  liquid form, add 2 table spoons of Agave.

Gently stir all the ingredients, once the agave is incorporated into the ingredients, add 1/3 cup of Blueberries.

Gently stir all the ingredients once more until all the Blueberries are incorporated into the ingredients.

Set the bowl aside and on to the next step!

Pre-heat pan on stove on medium heat, then add 1 tablespoon of Sesame Oil.

Add the Spelt Flour Pancake Mixture onto the pan, add enough mixture to make the pancake size you like!

Adjust heat as necessary.

Cook each side 2 minutes until the pancake look lightly brown.

 Let the pancakes cool down until they're ready to be served.

Add Agave as syrup (to taste!)
